THAI STEWED PORK TROTTERS & TRIPE @ PRATUNAM

While on a quick trip to Bangkok (... see One Night In Bangkok blog), we were staying in the Pratunam area which has this stall that sells really fantastically good stewed pork trotters & tripe.
The dish is sold from this stall opposite the renown Wantan Noodles stall at the same shop.
The trotters and tripe (mainly pig's intestine) are stewed with a thick gravy of dark & light soy sauce in this pot, slowly broiling until the trotters & tripe are superbly soft and sucks in the sauce.
One can make the standard order or choose to one's liking.
I went for a smaller portion of the trotter and more intestines, specifically telling them to select the head of the front intestines.
In another pot are chopped up stewed salted vegetables. This will provide the balance roughage for the meal - this is not to salty and have some sweetness.
My order came, with the large intestines shown pronouncely, some trotters hiding somewhere and two halves of hard-boiled eggs with a very yellow yolk.
One can take this by itself or with rice. The dish is quite salty, so I would recommend taking it with Thai fragrant white rice OR ...
OR do like what I did, order a bowl of Wantan Noodles Soup and pour in the excess salty gravy into the soup .... It's a great combo - the stew gravy certainly pump up the flavor of the soup!
The pork trotter has been slowly broiled until their meat are soft and tender making them easy to eat. The pork skin themselves are super soft, one can easily just suck them in - seriously no biting required.
Slurp! Slurp!
The above photo shows why I went for the head of the large intestine. These have thicker wall with a thin layer of fat in between that will add to its flavor. Similarly slow broiled, the intestines were very tender.
